Gluten-Free Veggie Lasanga

My Gluten-Free vegetarian lifestyle has definitely been a challenge. Today for dinner I decided to try something new. I found a recipe for lasagna. I decided to give it a try. Next time I just need to make sure I have pine nuts. I took this recipe and made it my own... and oh wow! It was delicious! I realized I did not have any pasta sauce but always seem to have an abundance of canned tomato types in the pantry. So, I made my own sauce... and might I add it was the best sauce I've ever made. I'm leaving the recipe but since I don't measure anything when I'm concocting I'll leave it up to you to decided.

SAUCE:
  • 1 can tomato paste
  • 1 can diced tomatoes
  • garlic cloves
  • pizza seasoning
  • sea salt
  • minced mushrooms, red onions, and celery
  • fresh basil
  • tomato basil feta cheese
  • parmesan cheese

YUM....


LASAGNA:
  • polenta
  • pesto sauce
  • pasta sauce
  • fresh mozzarella
  • tomato basil feta
  • minced onions, mushrooms, celery (make extra from the sauce to sprinkle on)
  • eggplant thinly (paper thin) slices
  • GF corn flake crumbs (sprinkled on the top for a nice crunch!)



I used an 8x8 pyrex pan. Pre heat oven at 375°. Layer the slices of polenta then eggplant. Pour pesto and tomato sauce over the layers. Sprinkle veggies mozzarella and feta cheese. Repeat! Sprinkle cornflake crumbs on top. Bake for 25-30 minutes and devour!

...like I did!

a much needed update!

Whew! The last few weeks have been pretty crazy! They finally figured out my problems and all is looking well. It's going to take quite a few weeks if not months (and what I've read other places, years) to fully recover but, I'm definitely on the up side. I think the gluten-free thing is really helping matters. Meatfree-wheatfree is a super hard diet but, at least I'm eating super heathy!

The week of the 7th was Addies first week in her crib. When I came home from the hospital I just felt it was time. I always thought I would be too nervous and would end up sleeping on the floor of her room until she was 2. I obviously didn't want to be the crazy mom that did this so, I decided this was as good of a time as any. She slept so well that night. She also did what I feared the most... rolled over in her sleep. I managed. I started using the sleep positioner and it has worked wonders. I think she feels like she is being snuggled and hardly moves around as much. And, the good baby that she is, she is now sleeping around 9 - 10 hours through the night! :)


Since then she has been quite the rollie pollie. She is holding her head up and even scooting quite a bit. I like to think she is crawling already. She is very advanced. :) The discovery of her feet has been pretty adorable. The cooing involved in toe touching is pretty impressive. Since this discovery she has also been grabbing things and sitting up pretty well, still with support. Cousin Leah let her borrow her excersaucer and holy cow did her eyes light up! It may be a bit overwhelming but she loved it! Maybe she liked the independence of sitting up on her own.

Today Addie tried out her BeBe. She is really getting stronger! She sat up for a good 5 minutes. She is really starting to make some fun faces. I have a feeling we'll be seeing more of some of these sassier ones in her teen years.

Every morning while I make coffee and a bottle, I lay Addie in her crib with her mobile on. She talks so much, I just love it! This time I accidently scared her. It's still super cute though.

Cousin, Cousins Everywhere....


The holidays this year have been lots of fun. Addie had the chance to meet four of her cousins! Christmas time the three of us took our first road trip to Pennsylvania to visit Gramma and Pappy Brown. The trip was a little longer than expected but, we made it! Lane was so excited to finally meet his little cousin Addie. He love feeding her and holding her. He did not want to leave her side!

On New Years Eve we decided to go visit my cousin Kelly. It was really nice to see all the girls that I went to school with that have babies now. It is really something to see how close all of those girls are after all these years. They are all lucky to have each other and their kids to grow up together. I'm glad Addie thought it would be nice to finally open her eyes for a picture with her cousins.

Next up was Valentines Day. The last time Kelly, Pat and Leah saw Addie was right before Christmas and she was still pretty sleepy. Now just over two months old she is at least able to smile for a picture! It's hard to believe how fast Leah is growing. I feel like it wasn't that long ago that I was taking pictures of her and her little pucker face. Now, she is running around and reading books! We might not know what she is saying but that's what makes it so cute! I have a feeling those two will be quite the handful together when they get older. We can not wait to see what little spout will be so
the three of them can get into some serious trouble!
